About the owners
Born from a desire to create something by hand—a blend of science, craft, and artistry—Wild Hare Cidery celebrates Virginia’s apple-growing heritage from its orchard in the heart of the Shenandoah Valley. The cidery presses heritage apple varieties grown on its own land, cool-fermenting the juice slowly to a natural dryness and aging each batch for over a year. The result is an authentic, small-batch cider that reflects both the fruit and the foothills of the Blue Ridge Mountains—distinctly Virginia, refreshingly minimalist, and never overly sweet.
History of the venue
Wild Hare lives by the principle that “less is more.” Its process favors purity over additives, with each cider crafted to express the character of the apples rather than masking it with sugar or flavorings. The cidery’s dedication to simplicity and patience—pressing, fermenting, and aging by hand—distinguishes it from mass-produced brands and has earned it a reputation for integrity and craftsmanship in Virginia’s growing cider community.
Winemaking philosophy
Guests can experience Wild Hare’s creations at one of four distinctive locations across Virginia: the industrial-chic Cider Tasting Room in Berryville, the Cider Pub & Courtyard in Fredericksburg, the circa-1840 Log Cider House in historic downtown Leesburg, and the circa-1830 Cider Pub & Garden in Warrenton. Each offers its own atmosphere—from rustic charm to modern edge—while maintaining the same commitment to honest, heritage-driven cider.
